A couple of months ago we reached out to bloggers across the country and asked them to come up with “out of the box” egg roll mashups. We were blown away with the recipes these amazing women created and we think you will be too. Below are five of our favorites. We bet you’ll be as excited to try these mashup recipes as we were.
- CHEESY EGG ROLL AND TATER TOT BREAKFAST BAKE
Egg rolls for breakfast? Ok, we admit it surprised us a bit too but this is one easy and delicious one dish casserole that will both surprise and delight your family. It’s also a great way to sneak some veggies into the breakfast meal. It’s the perfect dish to serve at your next lazy weekend family brunch. You can find Alli’s recipe here .
- BACON WRAPPED CHICKEN EGG ROLL JALAPENO POPPER
Egg rolls and poppers are the perfect mashup for football season. This tasty appetizer delivers the best of both worlds in one delicious bite – it’s an amazing fusion of Asian and Mexican flavors. And fun to eat too! You can find Loriann’s recipe here.
- CHINESE SPARE RIBS AND EGG ROLL BAKED WONTONS
This all-Asian mash up fuses a stand by favorite, Chinese spare ribs, with Van’s Kitchen egg rolls. These one bite wonders make a great appetizer or a fun, hands on dinner time meal. Some of us * ahem * short cut the recipe by buying prepared Chinese spare ribs from our favorite Chinese restaurant. Either way we’re confident that you’ll love this recipe from Amy and Jared.
- SHRIMP EGG ROLL THIN & CRISPY PIZZA
This may not be a traditional version of pizza but who cares? It’s delicious! We love how The Kitchen Whisperer pizza-fied Van’s Kitchen Shrimp Egg Rolls and kept the crust light and crunchy by using egg roll wrappers. Just like some of the other great egg roll mashups we’ve already highlighted, the Shrimp Egg Roll Pizza doubles as a sophisticated appetizer for guests or an easy and unique weeknight dinner time favorite. - EGG ROLL NACHOS
This is another fantastic fusion of Asian and Mexican flavors. China and Mexico are worlds apart but for some reason their foods blend well together – it’s probably because of the bold flavors in each cuisine. Flavor is important but if you’re a mom you’re equally as concerned about serving your family healthy foods. This recipe is a great way to sneak a few veggies into their diet as the egg rolls are filled with cabbage and carrots. You can also add some pico de gallo to incorporate a few more. Joy’s recipe makes a great afterschool snack, appetizer for game day or an effortless, but crowd pleasing, dinner time meal.
